If you're familiar with the mellow tanginess and crumbly, yet creamy texture of Wensleydale cheese from Yorkshire, England, then you’re going to fall in love with our Windsordale. It's made right down the road from us in Windsor County, Vermont. The cheesemakers follow a recipe from the 1800s and use a peg mill to tear the curd, which results in a firm, yet flaky, texture—a technique that's not used anywhere else in the United States. To make this cheese extra special plump dried blueberries are added. The result is a delightful combination of mild tangy cheese and sweet blueberries...and a beautiful addition to any cheese tray.
