Our candymakers heat real Vermont maple syrup to the crystalline stage and then whip the syrup until it's light and fluffy. Then they pour the confection into maple-shaped molds and allow it too cool. As it cools, the candy magically develops a soft crystalline texture and intense maple flavor.
