A Christmas Tradition Saved! Every year at Christmas I make poteca for my sister and brothers. It's a sweet yeast dough pastry that has to be rolled out to 20"x30" before the filling of ground walnuts, brown sugar, butter, and flavorings is spread on, rolled up, and baked. Our grandmother and mother would make it every year and since they are both gone now, it's up to me to carry on the tradition, which I love. Last year, there was no poteca because by the time I discovered my husband had thrown out my pastry cloth instead of washing it, it was too late to do anything about it. This year, however, I got smart. I ordered a one yard length of oilcloth from Vermont Country Store and let me tell you, it is the perfect pastry cloth. It has just enough "grab" that you don't have to use much flour, but at the same time the dough slides over the surface without sticking. And clean up is a breeze.
