The full, mellow flavor of our aged Cheddar comes from careful attention, patient aging, and the fresh milk of Jersey cows raised on our small family farms. Jerseys produce rich, creamy milk with notably higher percentages of butterfat, calcium, and protein. Whole, fresh Vermont milk is slow-aged and individually formed into 3 lb. wheels to bring our private stock Cheddar to full flavor. For a party or buffet, just remove the protective wax coating and then let guests slice their own.
