This raw milk cheese is made here in Vermont with premium milk sourced from a single dairy herd. The cows graze close to the creamery, so this cheese is about as local to Vermont as you can get. The cheesemakers add a blend of tomatoes, sweet red and green peppers, onions, chili peppers, garlic, herbs, and spices—pretty much everything you'd find in the best restaurant salsa—to their recipe for mild and creamy "jack" cheese. The result is a zesty cheese with a mild bite that melts easily over nachos or in grilled cheese sandwiches, and makes a wonderful addition to any cheese board.
