Made by hand in small batches, our Vermont Cheddar owes its full mellow flavor to patient aging, attention to detail, and the fresh milk of Jersey cows raised without hormones or antibiotics on small Vermont family farms. Jerseys produce rich, creamy milk with notably higher percentages of butterfat, calcium, and protein, yet the milk’s naturally low in lactose. It’s a difference that comes through in every bite of our savory Cheddar. 1 lb. Aged to Perfection Whatever your preference, we offer a Cheddar that’s slowly aged to satisfy your taste. Choose from our Sharp 1 Year, Extra-Sharp 2 Year, Blue Ribbon 3 Year with a bold bite and subtly sweet finish, or Reserve 4 Year, a robust cheese with a rich buttery tartness and smooth crumbly texture. Signature Smoking While many cheeses are dipped in smoking liquids, our Maple Smoked and Horseradish Smoked Cheddar (#H4089) are cold-smoked over smoldering maplewood chips for up to 4 hours for a subtle yet satisfying smoky flavor.
