Maple 101 - Your Guide To Vermont Maple Syrup. 1. It all starts with one winged seed whirling through the air. 2. The seed sprouts into a sapling. 3. The sapling grows into a mature maple tree. 4. After 40 years, a maple tree reaches the productive stage when it can be tapped. 5. Sap begins to flow in the spring due to warm days and cold nights.

Making The Grade - Vermont Maple Syrup Goes To The Head Of The Class. When it comes to selecting a pint, quart, or gallon of maple syrup, you'll notice that each bottle is labeled: Fancy, Grade A, or Grade B. Don't be fooled into thinking that grades are related to quality. Unlike in the classroom, where A's trump B's and B's trump C's, in the sugarhouse all Vermont Maple Syrup is of the same high quality, no matter what the grade. In fact, the same process is used to produce each grade of syrup, the difference lies in the resulting color and flavor. Light amber syrup, like Vermont Fancy, is made from early-season sap, so it's lighter in color with a delicate flavor. Darker syrup, like Grade B, is made from sap that runs late in the season and has a more robust maple flavor.
Fancy Grade (light amber) is made from the first sap run of the seasons, is lightest in color, and has the most delicate of pure maple taste.Grade A (medium amber) is made from the second run of the season and makes up the bulk of production. It's slightly darker in color with caramel undertones. Grade B (dark amber) is produced just before season's end, which happens when night temperatures no longer drop below freezing.
