Earthy mushroom flavors near the rind complement a surprising sweetness toward the center. 2 lb. cylinder-shaped, firm Cheddar is an ideal centerpiece for a holiday cheese board. Available with a natural, mold-ripened rind and a Vermont Otter Creek beer-washed rind infused with a malt-like sweetness.
